"The bronze sculpture of San Pascual Baylon is made from an original intricately carved piece of wood, following the lost wax technique. Pigmented patinas are placed on the bronze to match the natural pigments used to polychrome the traditional woodcarving.
Religious folklore describes San Pascual as a shepherd who became a Franciscan Lay brother and who worked in the dining room. San Pascual has become the popular patron saint of the kitchen. I like to attribute the symbolism of a carved ebony spoon that is placed in the hands of the sculpture as an indication of Pascual's mood: if the spoon is turned outward, he inspires you to make great things in the kitchen, whereas if the spoon is turned inward, he inspires you to make reservations somewhere."
